Pacific NW Japanese Favorites with Chef Amy
Something rather unique to the food culture of the Pacific Northwest is the prevalence of teriyaki and yakisoba on the menus of little diners and food carts around the region. Thanks to a rich heritage of Japanese and Korean immigrants to Seattle and southward through Tacoma and Portland to our area, we have been lucky to enjoy these tasty dishes for decades now.
Would you love to learn quick, fresh versions of these dishes to make at home? In this class, Chef Amy will prepare the juiciest, most flavorful Teriyaki Chicken Thighs you've ever tried, using a lighter Japanese-style base. We'll skip the rice and serve the chicken with a flavor-packed Sweet Sesame Winter Salad. Then you'll enjoy wok-tossed Rainbow Veggie Yakisoba Noodles full of healthy veggies in a wonderful sweet-savory-spicy sauce. We'll finish with Japanese sweets. These are quick recipes, packed with flavor and perfect for weeknight family meals. Don't miss this class!

In this class, Chef Amy will be cooking a hearty meal featuring the bold flavors of Southern BBQ, right in her Zavor multicookers. She'll utilize the cookers to create tangy, saucy BBQ Baby Back Ribs; a creamy and comforting Macaroni & Cheese; and a flavorful pot of Collard Greens with Bacon. The meal with finish with Amy's Butterscotch Pudding.

(This is a NEW Kitchen Basics class and hasn't been offered previously.)
Want even MORE sauce? In this class, Chef Amy will bring us up-to-date with what she considers the five types of must-know Modern Classic Sauces: Beurre Blanc, Pan Sauce, Herb-Based Sauces, Nut-Based Sauces and Coulis. In the modern-day kitchen, we place more value on great flavors obtained with less work, and who can argue with that? These modern classics can be whipped up more quickly, are bold and vibrant, and are generally healthier (we'll just ignore beurre blanc for a sec, OK?).
Class will include thorough demonstrations of Amy's favorite example of each type of sauce, plus discussion of other varieties in each category. Let's get saucy!

Our popular hands-on knife skills class gives every student the opportunity to practice new skills as the class progresses. Have you ever wondered how the chefs on TV and at restaurants chop and slice so quickly and easily? The keys are proper technique and lots of practice! Learn what every home cook should know about chopping, slicing, dicing, and julienne. You will also learn the proper way to hold your knife, and how to maintain your knife with a honing rod to keep it sharper longer. This class always fills up fast so don't miss it!
PLEASE NOTE: Knives are provided for use during this class. You are welcome to bring your own knife as well if you wish, but we promise ours will be sharper! Please also bring an apron if you wish to wear one.

This class will explain in detail the "mother" sauces of classic French cuisine. You will learn about the building blocks of traditional sauce-making: stock and roux. Learn the difference between white and brown stock; and white, light, and dark roux. From there, Chef Amy will demonstrate how to properly combine and cook the stock, roux, seasonings, and flavorings into four classic Mother Sauces: Béchamel, Velouté, Espagnole and Tomate. She will also demonstrate the fifth Mother Sauce, everyone's favorite: Hollandaise! Each mother sauce will be flavored and transformed into a "small sauce" or variation, and served. Class discussion will include an exploration of modern updates to these classic sauces.
A special sauce is often the difference between a good home-cooked meal and a fine restaurant meal. Learn how to give your home cooking an upgrade with this exciting class!
