Spring is on the way, but we're not quite there yet. Still plenty of time to enjoy a hearty Italian pasta that makes a delicious and healthy meal everyone will enjoy at the end of a rainy day. This classic Roman dish combines the flavorful spices of Italian sausage with creamy chickpeas and bright escarole into a warming brothy stew. The pasta is cooked right into the stew, making this a wonderful one-pot dinner, meaning more time and less dishes for you! If you're trying out more vegetarian meals, this one can easily be made vegetarian by either subbing the sausage for more beans or using one of the great-tasting sausage alternatives available.
