Then we'll create a fresh, unfermented Cucumber Kimchi (aka Summer Kimchi) that is crunchy and delicious. The meal is rounded out with a pot of simple white rice and lettuce leaves. You and your family can eat all the components separately or use the lettuce to create tasty wrapped bites.
